What is Leaf Gelatin?

Leaf Gelatin is solid and transparent product that which is thin and flat form. It is extracted from the skin or bones of animals like Bovine or fish containing a protein that is rich in collagen and provides elasticity to animal tissues. Generally, leaf gelatin has similar components to powdered gelatin, but the difference in the processing, which transforms gelatin into dry leaves instead of small granules. While many are familiar with powdered gelatin for culinary purposes, leaf gelatin is gaining popularity due to the following reasons

How to Use

LEAF GELATIN

To use leaf gelatin, you need to

SOAK

Bloom the leaf gelatin by soaking in cold water for 5-10 minutes to make it flexible.

TO DISSOLVE

Warm the leaf gelatin gently on low heat, around 50-60 degrees Celsius, to dissolve it. The leaf gelatin will dissolve at a lower temperature compared to powdered gelatin.

COOL DOWN

Let the dissolved gelatin cool down before mixing it with other ingredients.

REFRIGERATED

For sweet treats, refrigerate them for 8-12 hours for proper setting. It will fully set after 24 hours, and after that, it will not set anymore.

Manufacturing Process of

Before becoming the leaf gelatin we are familiar with, it undergoes several production steps beginning with

Collagen Extraction Specific parts of animals, such as bovine hide, bones, fish scales, and fish skin, are cleaned and washed  to remove impurities. The collagen-rich parts are then simmered in water or acidic solutions to dissolve the tissues and extract collagen as a gelatin solution. The extraction process for plant-based gelatin differs depending on the specific ingredients used.

Filtration and Clarification   After extraction, the gelatin solution is filtered to remove solid impurities and unwanted particles, ensuring a pure and clear gelatin solution. Additional purification steps may be employed, such as centrifugation or the use of clarifying agents to remove any remaining impurities.
Concentration  The gelatin solution may undergo concentration to increase its strength by partially evaporating some water content, resulting in a higher concentration of gelatin.

Formation into Leaves  The concentrated gelatin solution is poured onto flat trays or molds to allow for even distribution and thickness. After cooling and solidification, the leaves are formed and can be stored until ready for use.
